Egg & Avocado Toast

Wake up on the sunny side with this Egg and Avocado Toast! Simply fry an egg with Laurin
100% CocoMCT oil then serve it on top of creamy avocado and crusty sourdough.
- 1 thick slice of bread (sourdough works best)
- 1/2 ripe avocado
- 1 teaspoon lemon juice
- Pinch of salt
- Pinch of pepper
- 1 egg
- 1 tablespoon Laurin 100% CocoMCT oil
- Toast the bread. While waiting, cut the avocado in half and remove the pit. Use a spoon to scoop out the flesh into a bowl then mash with a fork. Stir in the lemon juice, salt, and pepper. Spread on top of the bread.
- Warm Laurin 100% CocoMCT oil on a pan over medium heat. Once hot, reduce to low heat then crack the egg into the pan. Cook for about 2 minutes until the white is set but the yolk is still runny. Place on top of the mashed avocado. Enjoy!
